1. Deseed and wash the roselle flowers.
2. In a pot, add the flowers, water, and a pinch of salt. Simmer until soft.
3. Add sugar and continue to cook, stirring frequently, until the mixture thickens to a jam-like consistency.
4. Optionally, add lemon juice for extra tartness and balance.
5. Pour into sterilised jars, seal, and let cool.
